Chicken Fried Steak Gravy

Instructions:

1. Prepare the Steak:

  • In a shallow bowl, whisk together eggs, milk, and buttermilk.

  • In another bowl, mix flour, garlic powder, onion powder, paprika, salt, and pepper.

  • Dredge each steak:

    • Dip in the flour mixture, coating well.

    • Shake off excess, then dip in the egg mixture.

    • Coat again in flour, pressing lightly to adhere.

  • Place on a plate and let sit for 5 mins (helps coating stick better).

2. Fry the Steak:

  • Heat oil in a large skillet (about ½ inch deep) over medium-high heat (350°F).

  • Fry steaks 2 at a time (don’t overcrowd) for 3-4 mins per side, until golden brown and crispy.

  • Transfer to a paper towel-lined plate. Keep warm.

3. Make the Gravy:

  • Pour off all but ¼ cup of the pan drippings (leave the browned bits—they add flavor!).

  • Over medium heat, whisk in ¼ cup flour, cooking for 1-2 mins until golden.

  • Slowly pour in milk, whisking constantly to avoid lumps.

  • Simmer 3-5 mins, stirring, until thickened.

  • Season with salt, pepper, and garlic powder (adjust to taste).

4. Serve:

  • Place a crispy steak on a plate and smother with hot gravy.

  • Best with mashed potatoes, green beans, or biscuits!
