Instructions

1. Preheat & Prep:

  • Preheat oven to 400°F (200°C).

  • Line a baking sheet with parchment paper or lightly grease it.

2. Roast the Cauliflower:

  • In a large bowl, toss cauliflower florets with olive oil, garlic powder, paprika, salt, and pepper.

  • Spread in a single layer on the baking sheet.

  • Roast for 20–25 minutes, flipping halfway, until tender and lightly caramelized.

3. Make the Cheese Sauce:

  • In a saucepan, melt butter over medium heat. Whisk in flour and cook for 1 minute (this is your roux).

  • Gradually whisk in milk, stirring constantly until slightly thickened (3–5 minutes).

  • Reduce heat to low, then stir in cheddar and mozzarella until smooth.

  • Season with garlic powder, onion powder, salt, and pepper.

4. Assemble & Bake:

  • Transfer roasted cauliflower to a baking dish. Pour cheese sauce evenly over the top.

  • Sprinkle with extra cheese or toppings if desired.

  • Bake for 10–15 minutes until bubbly and golden.

5. Serve:

  • Garnish with parsley or red pepper flakes. Enjoy hot!
