Instructions
1. Preheat & Prep:

Preheat oven to 400°F (200°C).

Line a baking sheet with parchment paper or lightly grease it.
2. Roast the Cauliflower:

In a large bowl, toss cauliflower florets with olive oil, garlic powder, paprika, salt, and pepper.

Spread in a single layer on the baking sheet.

Roast for 20–25 minutes, flipping halfway, until tender and lightly caramelized.
3. Make the Cheese Sauce:

In a saucepan, melt butter over medium heat. Whisk in flour and cook for 1 minute (this is your roux).

Gradually whisk in milk, stirring constantly until slightly thickened (3–5 minutes).

Reduce heat to low, then stir in cheddar and mozzarella until smooth.

Season with garlic powder, onion powder, salt, and pepper.
4. Assemble & Bake:

Transfer roasted cauliflower to a baking dish. Pour cheese sauce evenly over the top.

Sprinkle with extra cheese or toppings if desired.

Bake for 10–15 minutes until bubbly and golden.
5. Serve:

Garnish with parsley or red pepper flakes. Enjoy hot!
