Strawberry Italian Cream Pound Cake

Ingredients:

For the Cake:
  • 1 cup unsalted butter, softened
  • 2 1/2 cups granulated sugar
  • 6 large eggs
  • 3 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup buttermilk
  • 1 teaspoon vanilla extract
  • 1 teaspoon almond extract
  • 1 cup shredded coconut
  • 1 cup chopped pecans
  • 1 cup fresh strawberries, finely chopped and lightly dusted with flour
For the Strawberry Cream Cheese Frosting:
  • 8 oz cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1/2 cup strawberry puree (fresh or frozen)
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
