Instructions
- Preheat oven to 350°F (175°C).
- Mix peaches + sugar, let sit 15 mins.
- In another bowl, whisk flour, baking powder, cinnamon, salt.
- Stir in milk and vanilla until smooth.
- Grease a 9×13-inch baking dish.
- Spread peach mixture in dish, then spoon batter on top.
Make the topping:
- In a saucepan, melt butter, then stir in sugars, water, and cinnamon.
- Bring to a boil, then simmer 5 minutes.
- Pour topping over the batter in the dish.
Bake:
- Bake 45–50 minutes until golden and bubbly.
- Cool slightly. Serve warm with whipped cream or ice cream.
Tips
- Fresh peaches are ideal, but thawed frozen ones work.
- Add a splash of bourbon or rum for extra depth.
- Chopped pecans or almonds make a great topping.
- Use gluten-free flour or keto swaps like almond flour if needed.
