Vanilla Velvet Cake

Ingredients:

For the Cake:

1 cup (2 sticks) unsalted butter, softened

2 cups granulated sugar

4 large eggs, room temperature

1 tbsp pure vanilla extract

3 cups cake flour (or use all-purpose flour sifted with cornstarch*)

1 tbsp baking powder

1/2 tsp salt

1 cup buttermilk, room temperature

1/2 cup sour cream, room temperature

*To make 1 cup cake flour substitute: Measure 1 cup all-purpose flour, remove 2 tbsp, and add 2 tbsp cornstarch. Sift well.

For the Vanilla Buttercream (optional):

1 cup (2 sticks) unsalted butter, softened

4 cups powdered sugar

2 tsp vanilla extract

2–4 tbsp heavy cream or milk

Pinch of salt
