Instructions

1. Preheat the Oven

Preheat your oven to 325°F (163°C). This ensures even baking.

2. Mix the Wet Ingredients

In a large bowl, whisk together the cooking oil, granulated sugar, and eggs until the mixture is light and well-blended.

3. Prepare the Dry Ingredients

In another bowl, sift together the flour, baking soda, cinnamon, and salt. Sifting prevents clumps and helps the cake bake evenly.

4. Combine Wet and Dry

Gradually add the dry mixture to the wet mixture, stirring just until combined. Avoid overmixing. Stir in the vanilla extract.

5. Fold in Apples and Pecans

Gently fold in the diced apples and chopped pecans until evenly distributed in the batter.

6. Prepare the Pan

Grease and flour a tube pan or two loaf pans. Pour in the batter and smooth the top.

7. Bake

Bake at 325°F (163°C) for 1 hour, or until a toothpick inserted in the center comes out clean.
If using loaf pans, check for doneness at 50 minutes.

Make the Caramel Glaze

  1. In a small saucepan, combine butter, brown sugar, and milk.

  2. Bring to a gentle boil over medium heat, stirring constantly.

  3. Boil for 2–3 minutes, then remove from heat.

  4. Stir in vanilla extract.

  5. Let it cool slightly before pouring over the warm cake.

Serving Suggestion
