Step-by-Step Instructions for Homemade Potato Soup
1. Cook the Bacon for Rich Flavor
In a large soup pot, cook the bacon over medium heat until crispy. Remove it and place it on a paper towel to drain. Reserve some bacon bits for garnish.
2. Sauté Vegetables in Bacon Grease
Leave a small amount of bacon grease in the pot. Add the onion, carrots, and celery. Sauté for 4–5 minutes until softened and aromatic.
3. Add Potatoes and Seasonings
Stir in the diced potatoes. Season with salt and pepper, and optionally add garlic powder or smoked paprika. Cook for 2–3 minutes to blend the flavors.
4. Pour in the Broth and Simmer
Add the broth and bring to a boil. Reduce heat and simmer for 10–12 minutes until potatoes are fork-tender.
5. Thicken the Soup
Mix the milk and flour (or cornstarch) in a small bowl. Gradually stir it into the soup, whisking constantly. Simmer for 5 minutes to thicken.
6. Blend for Creaminess
Carefully blend about half the soup using an immersion blender or food processor. Return the blended portion to the pot for a creamy yet chunky texture.
7. Add Heavy Cream and Cheese
Stir in the heavy cream and grated cheese. Mix until the cheese is fully melted and the soup becomes creamy and smooth.
8. Garnish and Serve
Ladle into bowls and top with crispy bacon bits, extra cheese, and a pinch of fresh parsley.
