Instructions
Preheat Oven & Prepare Pan
Preheat the oven to 350˚F (175˚C). Line a loaf pan with parchment paper and set aside.
Make the Filling/Topping
In a small bowl, combine brown sugar, cinnamon, and nutmeg. Mix and set aside.
Make the Cake Batter
In a large bowl, combine granulated sugar, melted butter, sour cream, eggs, milk, and vanilla extract. Mix by hand or with an electric mixer until smooth.
Combine Dry Ingredients
In a separate bowl, whisk together flour, baking powder, baking soda, and salt.
Combine Wet & Dry Ingredients
Add the dry ingredients to the wet mixture. Stir until just combined—do not overmix.
Fold in Apples
Reserve a small handful of chopped apples for topping. Fold the remaining apples into the batter.
Layer the Batter
Pour half the batter into the prepared loaf pan and spread evenly.
Sprinkle half of the cinnamon sugar mixture over the batter.
Use a butter knife to swirl the filling gently through the batter.
Pour the remaining batter on top and smooth out.
Scatter the reserved apples over the top and sprinkle with the remaining cinnamon sugar.
Swirl again gently with the knife.
Bake
Bake for 50–55 minutes, or until a toothpick inserted in the center comes out clean.
Cool
Place the loaf on a wire rack to cool for 10–20 minutes before glazing.
Make the Glaze
In a bowl, whisk the sifted icing sugar with 1–2 teaspoons of hot water until smooth and pourable.
Glaze & Serve
Drizzle the glaze over the cooled loaf. Let it set for 5–10 minutes before slicing.
Tip:
For extra flavor, sprinkle a few chopped toasted pecans or walnuts on top before baking.
