1️⃣ Prepare the Lobster Tails
Thaw the lobster tails overnight in the refrigerator. Once thawed, cut down the center of the top shell using kitchen shears and carefully lift out the meat, keeping it attached at the base.

2️⃣ Marinate
In a bowl, combine buttermilk, Old Bay seasoning, and minced garlic. Place the lobster tails in the mixture and let them marinate for at least 30 minutes in the fridge.

3️⃣ Prepare the Batter
In a separate bowl, mix together the flour, lemon pepper seasoning, paprika, and baking powder until well combined.

4️⃣ Set Up the Frying Station
Heat butter and oil (enough for deep frying) in a deep fryer or heavy-bottomed pot to 350°F (175°C). Prepare a plate lined with paper towels to drain the fried tails.

5️⃣ Coat and Fry
Remove the lobster tails from the buttermilk marinade. Dredge each tail in the flour mixture, ensuring an even coating. Carefully lower them into the hot oil and fry for 3–5 minutes, or until golden brown and crispy.

6️⃣ Drain and Serve
Use a slotted spoon to remove the lobster tails from the oil. Place them on the paper towel-lined plate to drain any excess oil. Let cool slightly before serving.

7️⃣ Enjoy!
Serve hot as a main dish or appetizer, with lemon wedges or your favorite dipping sauce.
