Instructions

Step 1: Preheat the Oven

  • Preheat to 375°F (190°C).

  • Grease a 9×13-inch baking dish with olive oil or cooking spray.

Step 2: Prepare the Chicken Mixture

  • In a large bowl, mix shredded chicken, sour cream, chicken broth, diced tomatoes, bell peppers, onion, 1 cup shredded cheese, fajita seasoning, and cilantro until well combined.

Step 3: Transfer to Baking Dish

  • Spread the mixture evenly in the greased baking dish.

Step 4: Add Cheese and Breadcrumb Topping

  • Sprinkle the remaining 1/2 cup of cheese on top.

  • Mix panko breadcrumbs with a little olive oil or melted butter and sprinkle over the cheese.
