Preheat the oven to 200°C (400°F). Line a baking sheet with parchment paper.
Roll out the puff pastry sheet on a lightly floured surface to smooth out any creases. Cut it into 4 equal squares.
Place a portion of ham and grated cheese in the center of each square, leaving about a 1 cm (½ inch) border around the edges.
Fold each square over into a triangle or rectangle, pressing the edges firmly to seal. You can crimp the edges with a fork for a decorative touch.
Brush the tops of the pockets with the beaten egg to give them a golden, glossy finish.
Transfer to the prepared baking sheet and bake for 15–20 minutes, or until the pastry is puffed and golden brown.
Let cool slightly before serving. Enjoy warm!
Tips
Customize the filling with herbs, mustard, or sautéed onions for added flavor.
Great for freezing before baking—just pop them straight into the oven from frozen and bake a few minutes longer.
