Instructions:

Preparation of Yeast Mix

  1. Heat 2 cups of water to 110°F (43°C). It should be warm to the touch but not boiling.

  2. In a large mixing bowl, combine warm water, sugar, and yeast. Stir until dissolved. Let it sit for about 5–10 minutes until foamy.


Mixing the Dough

  1. Add 2 eggs to the yeast mixture and mix well.

  2. In a separate bowl, mix the bread flour and salt.

  3. Slowly add the flour mixture into the yeast mixture, using a wooden spoon or the dough hook of a stand mixer. Mix until a dough forms.


Kneading the Dough

  1. Place the dough on a lightly floured surface. Knead for 8–10 minutes until soft and smooth.

    • If using a stand mixer, knead on medium speed for 5–7 minutes.

  2. Add more flour if necessary to prevent sticking.


First Proof

  1. Place the dough in a lightly oiled bowl. Cover with a damp cloth or plastic wrap.

  2. Let it rise in a warm place for 1–1.5 hours or until doubled in volume.


Shape the Rolls

  1. Punch down the dough to release air.

  2. Divide into 12 equal pieces.

  3. Form each piece into a ball by pulling the edges toward the center and pinching together.

  4. Roll each ball gently into a smooth shape.

  5. Place the rolls on baking paper, leaving space between each one.


Second Proof

  1. Cover with a damp cloth or plastic wrap.

  2. Let rise for another 30–45 minutes until slightly puffed.


Preheat Your Oven

  1. Preheat the oven to 220°C (428°F).


Prepare for Baking

  1. Beat the egg yolk with 1 tablespoon of water.

  2. Brush the tops of the rolls with the egg yolk mixture for a golden finish.


Bake the Rolls

  1. Bake in the preheated oven for 15–20 minutes, until golden brown and hollow-sounding when tapped.

  2. Remove from the oven and cool on a wire rack.
