Instructions
1. Preheat Oven
Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish.
2. Mix the Casserole Filling
In a large mixing bowl, combine the shredded chicken, thawed hashbrowns, sour cream, cream of chicken soup, shredded cheese, melted butter, chopped onion, salt, and pepper. Mix well until fully incorporated.
3. Transfer to Baking Dish
Spread the mixture evenly into the prepared baking dish and smooth the top with a spatula.
4. Add Optional Topping
If using, toss crushed cornflakes with 2 tablespoons of melted butter. Sprinkle the mixture evenly over the top of the casserole.
5. Bake
Bake uncovered for 45–50 minutes, or until the casserole is hot and bubbling and the top is golden brown.
6. Serve
Let the casserole rest for 5–10 minutes before serving. Enjoy it as a comforting main dish or a hearty side.
