Instructions
1. Prepare the Nougat:
a. In a medium saucepan over medium heat, combine sugar, corn syrup, and water. Stir until sugar dissolves.
b. Attach a candy thermometer and heat the mixture to 250°F (hard ball stage).
c. While heating, beat the egg white with a pinch of salt until stiff peaks form.
d. Slowly pour the hot sugar mixture in a thin stream into the egg white while beating at high speed.
e. Continue beating until the mixture thickens, becomes glossy, and holds its shape — this is your nougat.
f. Mix in the vanilla extract until fully incorporated.
2. Assemble the Bars:
a. Line a square or rectangular baking dish with parchment paper, leaving an overhang for easy removal.
b. Spread the nougat evenly in the dish and let it cool and set for at least a couple of hours or overnight.
c. Once set, use the parchment to lift the nougat out and cut it into bars or bite-sized pieces.
3. Coat with Chocolate:
a. Melt the chocolate chips and shortening (or coconut oil) together in a microwave-safe bowl or double boiler, stirring until smooth.
b. Dip each nougat piece into the melted chocolate, coating completely.
c. Place coated bars on parchment-lined trays and allow the chocolate to harden.
4. Enjoy!
