Instructions:
Preheat your oven to 325°F (165°C).
Trim excess fat from the steak and cut it into serving-sized pieces. Season with salt and pepper.
Dredge each steak piece in flour, shaking off any excess.
In a large ovenproof skillet or Dutch oven, heat oil over medium-high heat. Brown the steak pieces on both sides (about 3 minutes per side), then transfer to a plate.
In the same skillet, cook the sliced onions until soft (about 5 minutes), then add the garlic and cook for 1 more minute.
Return the steak to the skillet, placing it over the onions. Pour in the diced tomatoes and juice. Add Worcestershire sauce, beef broth, oregano, and thyme. Stir to combine.
Bring the mixture to a simmer, then cover with a lid or double layer of foil. Transfer to the oven and cook for 1 1/2 to 2 hours, until the steak is tender.
Remove from the oven. Serve hot, garnished with fresh parsley if desired.
