Instructions
Marinate:
Whisk all marinade ingredients in a baking dish. Add the pork loin, cover, and refrigerate overnight (24 hours).
Roast:
Preheat oven to 325°F (163°C). Remove pork from marinade and place in a roasting pan.
Roast for 30–40 minutes per pound, or until internal temperature reaches 175°F (79°C).
Make the Sauce:
In a saucepan, whisk together all sauce ingredients. Bring to a boil, then reduce to a simmer until thickened.
Baste & Finish:
Pour the sauce over the pork. Continue roasting for 30 minutes more.
Rest & Serve:
Let the pork rest for 5 minutes before slicing. Serve with extra sauce if desired.
