Instructions
1. Prepare the Crust
In a bowl, combine graham cracker crumbs, sugar, and cinnamon. Pour melted butter over the mixture. Stir until evenly moistened.
Press into a 9-inch springform pan that has been sprayed with cooking spray.
2. Make the Cheesecake Filling
In a mixing bowl, blend cream cheese, condensed milk, powdered sugar, and eggs until smooth.
Add flour and vanilla extract. Beat on medium-high speed for 2–3 minutes.
3. Bake
Pour the filling into the prepared crust.
Bake at 350°F (175°C) for about 1 hour.
Tip: Do not use a toothpick test. The cheesecake is done when the center looks set but is not as puffed as the edges.
4. Cool
Remove from oven and place on a wire rack. Cool completely.
Once cooled, cover and refrigerate until well chilled.
5. Make Whipped Cream
In a chilled bowl, combine heavy cream, powdered sugar, and vanilla extract.
Beat until stiff peaks form.
6. Decorate
Top cheesecake with whipped cream.
Garnish generously with fresh strawberries and blueberries.
7. Serve
Keep refrigerated until ready to serve. Enjoy!
