How to Make Pecan Pie Bars
Make the Crust
Preheat oven to 150ºC (300°F).
In a bowl, combine flour, sugar, and salt.
Add the melted coconut oil and vanilla extract, mixing until fully combined.
Press the mixture evenly into a baking pan.
Bake for 12–15 minutes.
Set aside to cool.
Make the Filling
In a bowl, toss sliced apricots with lemon juice, flour, smoked salt, and any spices you like.
Pour the mixture evenly over the cooled crust.
Make the Streusel Topping
Combine oats, sugar, flour, coconut oil, and crushed toasted pecans in a bowl.
Mix until crumbly and well combined.
Bake the Bars
Increase oven temperature to 175ºC (350°F).
Sprinkle the streusel topping evenly over the filling.
Bake for 30–35 minutes or until golden brown.
Cool and Serve
Allow the bars to cool completely before cutting.
Enjoy with a scoop of dairy-free ice cream if desired!
