Instructions

1. Preheat the Oven

Preheat your oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan, or line it with parchment paper.

2. Prepare the Cake Batter

In a large mixing bowl, combine the cake mix, vegetable oil, pineapple juice, and eggs. Beat on medium speed with an electric mixer until the mixture is smooth and well blended.

3. Bake the Cake

Pour the batter into the prepared pan and spread evenly. Bake for 25–30 minutes, or until a toothpick inserted in the center comes out clean.

4. Make the Glaze

While the cake is baking, prepare the glaze. In a small saucepan, combine the powdered sugar, pineapple juice, and butter. Cook over medium heat, stirring constantly, until the butter is melted and the glaze is smooth.

5. Glaze the Warm Cake

When the cake comes out of the oven, place it on a wire rack. While still warm, poke holes all over the top using a toothpick or skewer. Pour the warm glaze evenly over the cake, allowing it to soak in.

6. Cool and Serve

Allow the cake to cool completely in the pan before slicing. For an extra tropical touch, garnish with pineapple slices or shredded coconut, if desired.

Final Tips

  • For a bolder pineapple flavor, try using pineapple cake mix if available.

  • This cake keeps well refrigerated for several days and tastes even better the next day.
