Here’s an oldie that still tastes good: Ambrosia Salad. A lot of people, including my Aunt Judie, love this simple dessert salad, and it never fails to be a success. Considering how simple it is to make at home, there is no reason to buy it from the deli.
In my opinion, salads like these will always be in style. Would you like to know why? Because they have the most mouth-watering flavor. They’re simple. They’re fun. You can easily make them. Kids love them. Adults admire them. Perfect for picnics, barbecues, and other gatherings.
Ambrosia Salad is something I’ve loved for a long time. My Aunt Judie first showed it to me years ago. The trouble is, if you want to buy it at the store, the prices are high—around $5 for a small container. For about $4, you can make this whole salad yourself.
What Is Ambrosia Salad Made Of?
A mix of delicious things:
Crushed pineapple
Maraschino cherries
Coconut
Mandarin oranges
Some people like it with almonds or other nuts, and some don’t. I sometimes roast the nuts before adding them—it makes all the difference.
In this salad, I used white miniature marshmallows, but the colorful fruit-flavored ones are also wonderful.
I don’t add extra sugar because the fruit is already sweet. To balance the sweetness, I include sour cream. It gives a subtle, creamy tang that works beautifully. Greek yogurt is also a great option.
Ingredients
1 (8 oz) tub Cool Whip (lite is fine)
½ cup sour cream (light is fine)
1 (11 oz) can mandarin oranges, drained
1 (20 oz) can crushed pineapple, drained
1 (10 oz) jar maraschino cherries, drained, halved, and patted dry
1 cup sweetened coconut flakes
2 cups miniature marshmallows
¾ cup chopped nuts (pecans, walnuts, or cashews, optional)
