Instructions

Prepare Slow Cooker
Lightly grease or line the slow cooker with parchment paper.

Soak Dried Fruit
Combine dried fruit and fruit juice in a bowl. Let sit for 30 minutes.

Mix Batter
Add brown sugar to the fruit mixture and stir well. Gradually fold in the self-raising flour until combined.

Cook Fruit Cake

Pour the batter into the prepared slow cooker.

Cover with a lid and place a clean kitchen towel under the lid to absorb condensation.

Cook on low for 2.5–3 hours, or until a toothpick inserted in the center comes out clean.

Cool and Serve
Let the cake cool in the slow cooker for 15 minutes. Then transfer to a wire rack to cool completely before slicing.
