  1. Preheat the oven to 375°F (190°C).

  2. In a large baking dish, arrange the sausage, potatoes, and peppers evenly.

  3. Dot the butter over the top, drizzle with olive oil, and season with oregano, basil, and black pepper.

  4. Cover the dish with foil and bake for 40–50 minutes until the potatoes are tender.


Optional Add-Ins

  • Carrots, zucchini, or broccoli for added veggies

  • Shredded cheese sprinkled over the top in the last 5 minutes of baking

  • Swap smoked sausage for diced ham
