Zucchini Cheese Bread – Super Cheesy & Juicy!

Instructions

 

1️⃣ Preheat and Prepare
Preheat the oven to 180°C (356°F) (top and bottom heat).
Grease a loaf pan (approx. 26 x 11 cm) or line it with parchment paper.

2️⃣ Prepare the Zucchini
Grate the zucchini coarsely, squeeze out the excess moisture, and sauté briefly in a little oil.
Season with salt and pepper, then set aside to cool slightly.

3️⃣ Mix the Dry Ingredients
In a large bowl, combine the flour, baking powder, 150 g of cheese, and chopped mint (if using).

4️⃣ Mix the Wet Ingredients
In another bowl, whisk together the eggs, warm milk, and oil.
Add the wet mixture to the dry ingredients and stir quickly into a smooth dough.

5️⃣ Combine & Transfer to Pan
Fold the sautéed zucchini into the dough.
Pour the mixture into the prepared pan and smooth the surface.
Sprinkle the remaining 50 g of cheese over the top.

6️⃣ Bake
Bake for 40–50 minutes, or until the top is golden and a wooden skewer comes out clean.

7️⃣ Cool and Serve
Let the bread cool slightly in the pan before removing.
Serve warm or at room temperature.

Tip:
Perfect for picnics, brunches, or as a savory snack. For variety, mix in bacon cubes, sun-dried tomatoes, or even olives.
