This Oven Baked Cheesy Corn and Spinach Casserole is a simple, satisfying side dish that brings together the sweetness of corn, the earthy flavor of spinach, and the rich comfort of melted cheddar cheese. Ingredients:

Ingredient Quantity

Fresh spinach leaves 2 cups

Corn kernels, drained 1 can (15 oz)

Large eggs 3

Shredded Cheddar cheese 1 cup

Milk ½ cup

All-purpose flour ¼ cup

Salt ½ teaspoon

Black pepper ¼ teaspoon

Garlic powder ¼ teaspoon

Butter, for greasing 1 tablespoon

 

How To Make Oven Baked Cheesy Corn and Spinach Casserole

Prep Oven & Dish: Preheat your oven to 375°F (190°C). Grease a medium-sized baking dish with butter.

Mix Batter: In a large mixing bowl, whisk together the eggs, milk, flour, salt, pepper, and garlic powder until smooth.

Combine Ingredients: Stir in the corn kernels, fresh spinach leaves, and half of the shredded Cheddar cheese.

Pour & Top: Pour the mixture into the prepared baking dish, spreading it evenly. Sprinkle the remaining Cheddar cheese over the top.

Bake: Bake in the preheated oven for 30-35 minutes, or until the top is golden brown and the casserole is set.

Serve: Let it cool for a few minutes before serving.
