🍌 Banana Bread Cheesecake Recipe

Ingredients

For the Banana Bread Layer:

  • 1 cup mashed ripe bananas (about 2–3 bananas)

  • ½ cup granulated sugar

  • ½ cup brown sugar, packed

  • ½ cup vegetable oil (or melted butter)

  • 2 large eggs

  • 1 tsp vanilla extract

  • 1 ½ cups all-purpose flour

  • 1 tsp baking powder

  • ½ tsp baking soda

  • 1 tsp cinnamon

  • ¼ tsp salt

For the Cheesecake Layer:

  • 16 oz cream cheese, softened

  • ½ cup granulated sugar

  • 2 large eggs

  • 1 tsp vanilla extract

  • ½ cup sour cream

Instructions

  1. Preheat the Oven

    • Heat to 325°F (160°C). Grease a 9-inch springform pan and line the bottom with parchment paper.

  2. Make the Banana Bread Batter

    • In a bowl, mix mashed bananas, sugars, oil, eggs, and vanilla until smooth.

    • Whisk together flour, baking powder, baking soda, cinnamon, and salt.

    • Gently fold dry ingredients into wet mixture until just combined. Set aside.

  3. Prepare the Cheesecake Batter

    • Beat cream cheese until smooth.

    • Add sugar, mixing until fluffy.

    • Beat in eggs one at a time, then stir in vanilla and sour cream until creamy.

  4. Assemble the Layers

    • Pour half of the banana bread batter into the prepared pan.

    • Spread cheesecake mixture over it.

    • Top with remaining banana bread batter, smoothing evenly.

  5. Bake

    • Bake for 60–70 minutes, or until the center is set and a toothpick comes out mostly clean.

    • Cool completely, then refrigerate at least 4 hours (overnight is best).

  6. Serve & Enjoy

    • Slice and serve chilled, plain or topped with whipped cream, caramel drizzle, or chopped walnuts.

Tips for Success

  • Use very ripe bananas for maximum flavor and sweetness.

  • Don’t overmix the cheesecake batter — keep it smooth and creamy.

  • Chill thoroughly before slicing for clean cuts.

  • A water bath (placing the springform pan inside a larger pan with hot water) helps prevent cracks, but isn’t strictly necessary.

Flavor Variations

  • Nutty Crunch: Stir walnuts or pecans into the banana bread layer.

  • Chocolate Twist: Add mini chocolate chips to the batter.

  • Caramel Banana Cheesecake: Drizzle salted caramel over each slice.

  • Spiced Up: Add nutmeg and cloves for a stronger spice flavor.
