Ingredients
2 ¼ cups all-purpose flour
½ cup powdered sugar
Pinch of salt
2 sticks butter, at room temperature
2 teaspoons vanilla extract
1 cup pecans, finely chopped
1 cup powdered sugar (for rolling)
Instructions
Preheat oven to 350°F (175°C).
In a large mixing bowl, cream together the butter and ½ cup powdered sugar until smooth.
Mix in flour, salt, vanilla extract, and chopped pecans until a dough forms.
Roll dough into 36 small balls and place on a parchment-lined or greased baking sheet.
Bake for 12 minutes. Remove from oven and let cool completely.
Roll cooled cookies in the remaining 1 cup of powdered sugar until fully coated.
