🍝 Ravioli with Tomatoes, Asparagus, Garlic, and Herbs Recipe

Ingredients

  • 1 (20 oz) package cheese or spinach ravioli (fresh or frozen)

  • 2 tbsp olive oil

  • 2 tbsp butter

  • 3 cloves garlic, minced

  • 1 pint cherry tomatoes, halved

  • 1 bunch asparagus, trimmed and cut into 2-inch pieces

  • ½ tsp red pepper flakes (optional)

  • ¼ cup fresh basil, chopped

  • 2 tbsp fresh parsley, chopped

  • ¼ cup grated Parmesan cheese

  • Salt and black pepper, to taste

Instructions

  1. Cook the Ravioli

    • Bring a large pot of salted water to a boil.

    • Cook ravioli according to package instructions until al dente. Reserve ½ cup pasta water, then drain.

  2. Sauté the Veggies

    • In a large skillet, heat olive oil and butter over medium heat.

    • Add garlic and cook until fragrant (about 1 minute).

    • Add asparagus and cook for 3–4 minutes, until crisp-tender.

    • Stir in cherry tomatoes and cook until softened, about 2 minutes.

  3. Combine & Toss

    • Add cooked ravioli to the skillet. Toss gently with vegetables.

    • Add a splash of reserved pasta water if needed to loosen the sauce.

  4. Finish with Herbs & Cheese

    • Stir in fresh basil and parsley.

    • Season with salt, pepper, and red pepper flakes if using.

    • Sprinkle with Parmesan cheese before serving.

Tips for Success

  • Use fresh ravioli for the best texture, but frozen works well too.

  • Don’t overcook asparagus — it should stay slightly crisp.

  • Add extra butter or olive oil if you want a richer sauce.

  • For more protein, add grilled chicken, shrimp, or even white beans.

Variations

  • Creamy Version: Stir in a splash of heavy cream or half-and-half.

  • Lemon Twist: Add fresh lemon zest and juice for a bright finish.

  • Roasted Veggies: Roast tomatoes and asparagus in the oven for deeper flavor.

  • Pesto Ravioli: Toss with basil pesto instead of butter for a different take.
