With Ricotta, Spinach & Hidden Eggs
🥧 Ingredients:
For the dough (or use store-bought puff pastry or shortcrust):
2 ½ cups (300g) all-purpose flour
⅓ cup (80ml) olive oil
½ tsp salt
½ cup (120ml) warm water
For the filling:
1 ½ lbs (700g) fresh spinach or Swiss chard, cleaned and chopped
1 tbsp olive oil
1 garlic clove, minced
1 ½ cups (400g) ricotta cheese
½ cup (50g) grated Parmesan or Pecorino Romano
2 eggs (beaten, for the filling)
4 whole eggs (for the center)
Salt, pepper, nutmeg to taste
