🥣 Instructions:

Mix wet ingredients:
In a bowl, whisk together mascarpone, sugar, lemon zest, lemon juice, eggs, and vanilla until smooth. -
Add dry ingredients:
Gently fold in flour, baking powder, and salt until just combined. The batter will be thick and creamy. -
Heat oil:
In a medium saucepan, heat about 2 inches of oil over medium heat to around 350°F (175°C). -
Fry fritters:
Scoop small spoonfuls (about 1 tablespoon each) of batter into the hot oil. Fry in batches, turning occasionally, until golden brown (about 2–3 minutes per side). -
Drain & dust:
Remove with a slotted spoon and drain on paper towels. Dust with powdered sugar while warm.
