Trim the crusts off your bread slices and flatten them with a rolling pin.
Add banana:
Option 1: Place a few banana slices at one end and roll the bread up tightly.
Option 2: Spread mashed banana inside for more even filling (especially if your bananas are very ripe).
In a shallow bowl, whisk together:
Eggs
Milk
Vanilla
Cinnamon
Sugar (if using)
Dip each roll-up in the egg mixture, coating all sides (but don’t let them get too soggy).
Heat a skillet over medium heat and add butter. Cook the roll-ups, turning frequently, until they’re golden brown and crispy on all sides (about 2–3 mins per roll).
Roll immediately in cinnamon sugar while warm. 🔥
Maple syrup for dipping
Chocolate sauce or Nutella drizzle
Fresh berries on the side
Or go full brunch mode with whipped cream!
