Instructions:

Preheat Oven:

Preheat your oven to 400°F (200°C).

Line a baking sheet with parchment paper.

Prepare the Caramelized Base:

On the parchment-lined tray, arrange 6 small mounds of brown sugar (about 1/2 tbsp each), spaced apart.

Place a few small dots of butter on top of each sugar mound.

Arrange 3–4 peach slices in a fan shape over each pile.

Sprinkle lightly with cinnamon, salt, and a dash of vanilla extract if using.

Cut the Puff Pastry:

Roll out puff pastry slightly and cut into 6 rectangles (or circles using a cup or cutter).

Place each pastry piece on top of the peaches, pressing down slightly around the edges.

Bake:

Bake for 18–22 minutes, or until the puff pastry is golden and crisp.

Flip and Serve:

Remove from oven and let sit for 1–2 minutes.

Carefully flip each tart using a spatula (they should release easily thanks to the parchment).

Drizzle with honey or syrup and serve warm with yogurt or whipped cream.
