Instructions:

  1. Prep the Zucchini:

    • Slice zucchini lengthwise into thin strips using a mandoline or sharp knife (about 1/8 inch thick).

    • Lightly salt the slices and let them sit for 10 minutes to draw out moisture, then pat dry with paper towels.

  2. Make the Filling:

    • In a bowl, mix ricotta, Parmesan, mozzarella, garlic, herbs, salt, pepper, and the egg (if using).

  3. Roll ‘Em Up:

    • Spread a spoonful of filling onto one end of each zucchini strip, then roll tightly.

    • Place each roll seam-side down in a baking dish with a layer of marinara sauce on the bottom.

  4. Bake:

    • Top with remaining marinara and a sprinkle of extra mozzarella or Parmesan.

    • Cover with foil and bake at 375°F (190°C) for 15–20 minutes, until bubbly and golden.

  5. Serve:

    • Garnish with fresh basil or parsley if you like. Serve with crusty bread or a side salad.

  • Add cooked spinach or chopped sun-dried tomatoes to the filling.

  • Use cream cheese instead of ricotta for a richer flavor.

  • Want it meaty? Mix in some cooked ground turkey, sausage, or lentils.
