Instructions:

Prep the Zucchini:

Slice zucchini lengthwise into thin strips using a mandoline or sharp knife (about 1/8 inch thick).

Lightly salt the slices and let them sit for 10 minutes to draw out moisture, then pat dry with paper towels.

Make the Filling:

In a bowl, mix ricotta, Parmesan, mozzarella, garlic, herbs, salt, pepper, and the egg (if using).

Roll ‘Em Up:

Spread a spoonful of filling onto one end of each zucchini strip, then roll tightly.

Place each roll seam-side down in a baking dish with a layer of marinara sauce on the bottom.

Bake:

Top with remaining marinara and a sprinkle of extra mozzarella or Parmesan.

Cover with foil and bake at 375°F (190°C) for 15–20 minutes, until bubbly and golden.
