Instructions:
Step 1: Make the Mashed Potato Filling
Boil the diced potatoes in salted water until tender (about 10-12 minutes).
Drain and mash them with a fork or potato masher.
Stir in the shredded cheddar cheese, sour cream, garlic powder, salt, and pepper until creamy and smooth.
Step 2: Form the Potato Bombs
Once the mashed potatoes have cooled a little, scoop out a spoonful and form it into a ball, about 1.5 inches in diameter. (You can also stuff the balls with a little extra cheese or cooked bacon bits for extra flavor!)
Roll the mashed potato balls in breadcrumbs to coat them evenly.
Step 3: Fry the Potato Bombs
Heat vegetable oil in a deep pan or skillet over medium heat. The oil should be around 350°F (175°C).
In a small bowl, beat the egg and brush it lightly on each potato ball before frying. This will help the breadcrumbs stick better.
Carefully fry the potato bombs in the hot oil, turning them occasionally to ensure even browning. Fry for about 3â5 minutes or until golden and crispy.
Step 4: Serve & Enjoy!
Drain on a paper towel to remove excess oil.
Serve hot with a side of ketchup, ranch, or your favorite dipping sauce.
