Prep the Potatoes:

Peel the potatoes and cut them into thin matchsticks (about 1/8 inch thick or thinner).

Soak the sticks in a bowl of cold water for 20–30 minutes to remove excess starch (this makes them crispier).

Drain and pat completely dry with a towel or paper towels.

Heat the Oil:

In a deep pan or skillet, heat the oil to 350°F (175°C).

Test a piece of potato — it should sizzle immediately when dropped in.

Fry in Batches:

Fry the potato sticks in small batches to avoid crowding.

Cook for 3–5 minutes or until golden brown and crispy.

Use a slotted spoon to transfer them to a paper towel-lined plate.

While hot, sprinkle with salt and any desired seasonings (paprika, chili powder, or even grated Parmesan).
