🥖 Crispy Croquetas de Jamón (Spanish Ham Croquettes)

Ingredients:

  • 1 tbsp olive oil

  • 1 tbsp butter

  • 1 small onion, finely chopped

  • 1 cup cooked ham, finely diced (preferably Iberian ham or Serrano for authenticity)

  • 2 tbsp all-purpose flour

  • 1 1/2 cups whole milk, warmed

  • Salt and black pepper, to taste

  • A pinch of freshly grated nutmeg (optional)

  • 1/4 cup chopped fresh parsley (optional)

  • 1 egg, beaten (for dipping)

  • 1 cup breadcrumbs (preferably panko for extra crispiness)

  • Vegetable oil for frying
