Mix the filling:
In a bowl, combine chopped hard-boiled eggs, onion, herbs, cheese, one raw egg, breadcrumbs (or mashed potatoes), salt, and pepper. Mix well until it holds together. Add more breadcrumbs if too soft.
Shape:
Form into small patties or balls, about the size of a golf ball. Flatten slightly if you like them crispier.
Optional coating:
Roll each fritter in dry breadcrumbs for extra crunch.
Fry:
Heat oil in a skillet over medium heat. Fry the fritters for 2–3 minutes on each side, or until golden and crisp.
Drain & serve:
Drain on paper towels and serve hot with your favorite dipping sauce.
