👩🍳 Instructions:
Prep the Potatoes:
Grate the raw potato and squeeze out any excess moisture using a clean tea towel or cheesecloth.
In a large bowl, mix together the mashed potatoes and grated raw potatoes.
Make the Batter:
Add the flour, baking powder, and salt to the potato mixture.
Stir in the egg and slowly mix in the milk until you have a thick but pourable batter (like thick pancake batter).
Fry the Boxty:
Heat a skillet or non-stick pan over medium heat and add a bit of butter or oil.
Spoon the batter onto the pan (about 1/4 cup per pancake). Flatten slightly with the back of a spoon.
Cook for 3–4 minutes per side, or until golden brown and cooked through.
Serve Hot:
Serve warm with sour cream, chives, smoked salmon, bacon, eggs, or even just a pat of butter!
🍀 Tips:
For extra flavor, add chopped green onions, grated cheese, or herbs to the batter.
Want it crispier? Use more grated potato than mashed.
These reheat beautifully in a toaster or air fryer!
