Roast the Hazelnuts: Preheat your oven to 180°C (350°F). Spread the hazelnuts over a baking tray and roast for about 10 minutes until they start to brown. Remove and allow them to cool. Once cooled, gently roll the hazelnuts between your fingers to remove the skins.

Melt the Chocolate: Half-fill a saucepan with water and bring it to a boil over medium-high heat. Place a heatproof bowl on top of the saucepan (ensuring it doesn’t touch the water) and add the chocolate pieces. Stir over the heat until the chocolate has melted, then remove from the heat.

Assemble the Cups: Line a muffin tin with cupcake liners. Pour a small amount of melted chocolate into each liner, just enough to cover the bottom. Place a whole hazelnut into the center of each. Then, pour more melted chocolate over the hazelnut until the liner is nearly full.

Chill: Sprinkle chopped hazelnuts on top for added texture. Refrigerate the cups for at least 1 hour until they are set.

Serve: Once set, gently remove the cups from the liners and enjoy!
