Baked zucchini fritters: the recipe for a tasty and healthy meal

Directions: 
1. Grate zucchini and add salt.
2. Cover with some plastic wrap and let rest for about 1 hour.
3. Finely chop garlic and whisk the eggs.
4. Now squeeze the zucchini with your hands to get rid of excess water.
5. Add garlic, chopped parsley, whisked eggs, breadcrumbs and cheese.
6. Shape the fritters and place them on a tray.
7. Sprinkle with some olive oil.
8. Bake them at 200° for 25/30 minutes, and turn them upside down when half cooked.
