Instructions:

  1. Prep first: Grease a baking sheet or line it with parchment paper. Set aside.

  2. Heat it up: In a heavy saucepan, combine sugar, corn syrup, and water over medium heat. Stir until sugar dissolves.

  3. Bring to boil: Let it boil until it reaches about 300°F (hard crack stage) on a candy thermometer.

  4. Add peanuts: Stir in the peanuts and continue cooking for another minute or two (they’ll toast up a little more).

  5. Finish it: Remove from heat. Stir in butter, vanilla, and baking soda. It’ll foam up — that’s good!

  6. Pour quickly: Pour onto the prepared sheet and spread it out with a spatula as thinly as you like.

  7. Cool and snap: Once it’s fully cooled, break it into pieces.
