Toast the Pecans:
Preheat your oven to 350°F (175°C). Spread the pecan halves in a single layer on a baking sheet. Toast in the oven for 8–10 minutes, or until fragrant and golden. Allow them to cool completely.
Melt the Caramel:
While the pecans are cooling, melt the caramels. You can do this in the microwave by heating them in 30-second intervals, stirring in between, or melt them in a saucepan over low heat, stirring constantly until smooth.
Assemble the Candies:
Line a baking sheet with parchment paper. Arrange the toasted pecans in clusters of 3–4 on the parchment paper, creating small turtle-shaped clusters that resemble a turtle’s legs.
Add Caramel:
Once the pecans are arranged, spoon a small amount of melted caramel onto each cluster, allowing it to slightly spill over the sides of the pecans to hold them together.
Melt the Chocolate:
In a microwave-safe bowl, melt the semi-sweet chocolate in the microwave in 30-second intervals, stirring each time, until smooth and fully melted.
Drizzle with Chocolate:
Drizzle or spoon the melted chocolate over the caramel and pecan clusters, covering them generously. Let the chocolate set and harden (you can speed up the process by placing them in the fridge for about 15–20 minutes).
You can use milk chocolate for a sweeter version, or dark chocolate for a more intense flavor.
Make sure the pecans are cool before adding the caramel to avoid melting the caramel prematurely.
