Instructions
1. Preheat and Prepare the Pan:

Heat a large oven-safe skillet over medium heat. Add 1 tablespoon of olive oil or butter and sauté the onion and bell pepper (if using) until softened, about 4-5 minutes.
2. Make the Frittata:

In a bowl, whisk together the eggs, milk, salt, and pepper. Stir in the shredded cheese and cooked bacon (or your choice of protein).

Pour the egg mixture into the skillet with the sautéed onions and peppers. Let it cook undisturbed for 2-3 minutes until the edges start to set.

Reduce the heat to low and cover the skillet. Let the frittata cook for another 5-7 minutes, or until the center is just set and the top is firm.

You can also pop the skillet under the broiler for 2-3 minutes to lightly brown the top, if desired.
3. Prepare the Sandwich:

While the frittata is cooking, toast the bread slices in a separate pan or toaster until golden brown.

Once the frittata is cooked through, remove it from the skillet and carefully slide it onto a cutting board.

Cut the frittata into quarters or halves, depending on the size of your bread slices.
4. Assemble the Frittata-Sandwich:

Butter the toast slices on one side. Place one slice of toast, butter-side down, on a clean surface.

Place a slice or quarter of the frittata onto the toast, then top with the second slice of toast, butter-side up.

Optionally, you can add a little more cheese in between for an extra cheesy sandwich!
5. Grill the Sandwich:

Heat 2 tablespoons of butter in the same skillet over medium heat.

Carefully place the frittata sandwich in the skillet and grill each side for about 2-3 minutes, until golden brown and crispy.
6. Serve:

Remove from the skillet and slice the sandwich in half.

Serve immediately with a side of fruit, a dollop of sour cream, or a fresh salad!
