1. Preheat your oven to 375°F (190°C).
2. Season the chicken breasts with salt and pepper.
3. Set up a breading station with three shallow bowls: one with flour, one with beaten eggs, and one with breadcrumbs.
4. Dredge each chicken breast in flour, then dip in egg, and finally coat with breadcrumbs.
5. Heat vegetable oil in a large oven-safe skillet over medium-high heat. Add the chicken and cook until golden brown on both sides, about 3-4 minutes per side.
6. Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the chicken is cooked through.
7. While the chicken is baking, prepare the glaze by combining soy sauce, honey, rice vinegar, sesame oil, garlic, ginger, and red pepper flakes in a small saucepan. Bring to a simmer over medium heat and cook until slightly thickened, about 5 minutes.
8. Once the chicken is done, remove it from the oven and pour the glaze over the top.
9. Garnish with chopped green onions before serving.

For a gluten-free version, use gluten-free flour and breadcrumbs. If you prefer a spicier kick, add more red pepper flakes or a dash of hot sauce to the glaze. For a more citrusy flavor, add the zest of one lime to the glaze. You can also try using chicken thighs instead of breasts for a juicier result.
