Preheat your oven to 375°F (190°C).
In a small skillet, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes.
Add the chopped broccoli florets to the skillet and cook for an additional 2-3 minutes until they are slightly tender. Remove from heat and set aside.
In a mixing bowl, whisk together the eggs, heavy cream, salt, and black pepper until well combined.
Divide the broccoli and onion mixture evenly among the four foil pie pans.
Pour the egg mixture over the broccoli and onion in each pan, filling them about three-quarters full.
Sprinkle the shredded cheddar cheese evenly over the top of each quiche.
Place the foil pans on a baking sheet and bake in the preheated oven for 20-25 minutes, or until the quiches are set and the cheese is golden brown.

Allow the quiches to cool slightly before serving.
Variations & Tips
For a different flavor profile, try adding cooked bacon or ham to the quiches for a meaty touch. You can also experiment with different cheeses, such as Gruyère or feta, for a unique twist. If you prefer a crust, consider using almond flour or coconut flour to keep it low-carb. Additionally, you can swap out the broccoli for other vegetables like spinach or bell peppers to suit your taste.
