Preheat your broiler to high.
In a large skillet, melt the butter over medium heat. Add the diced onion and minced garlic, sautéing until tender and fragrant.
In a bowl, whisk the eggs and pour them into the skillet. Cook gently, stirring frequently, until the eggs are softly scrambled.
Sprinkle the shredded cheese over the eggs and allow it to melt.
Turn off the heat and stir in the fresh spinach and diced avocado.
Lay out the slices of ham and spoon the egg mixture onto each slice. Sprinkle with diced tomatoes.
Roll each ham slice into a burrito shape, securing with a toothpick if necessary.
Place the burritos on a baking sheet and broil for 2-3 minutes, until the ham is slightly toasted.
Serve warm and enjoy!
Variations & Tips
For a spicier version, add a pinch of red pepper flakes or a dash of hot sauce to the eggs. If you have picky eaters, you can omit the spinach or tomatoes, or substitute with bell peppers or mushrooms. For a vegetarian option, replace the ham with large lettuce leaves or low-carb tortillas.
