Preheat oven to 400°F (200°C).
Line a baking tray with parchment paper.
Roll out one puff pastry sheet into a circle (use a plate as a guide and cut around it).
Place on the baking tray.
Spread a thin layer of optional mustard if using.
Add a layer of ham slices, leaving about ½ inch (1 cm) border around the edge.
Sprinkle evenly with grated Parmesan and optional pepper or herbs.
Roll out the second puff pastry sheet and cut it into the same-sized circle.
Place on top of the filling.
Press the edges together lightly to seal.
Place a small glass in the center of the circle (do not press down hard).
Cut the pastry into 16 equal sections (like pizza slices), stopping at the glass.
Take each strip and twist it gently 2–3 times outward. Repeat for all.
Remove the glass.
Brush the entire pastry with beaten egg.
Bake for 20–25 minutes or until golden and puffed.
Serve warm or at room temperature.
Great with a side of mustard, aioli, or herbed cream cheese dip.
