If you’re using store-bought cookies, simply grab your favorite kind. If you’re baking your own, make sure they’re fully cooled before making the sandwiches. (Chocolate chip or oatmeal cookies work great!)
Take one cookie, and gently spread about 2 tablespoons of ice cream onto the flat side of the cookie.
Top with a second cookie to create the sandwich.
Roll the edges of the ice cream sandwich in sprinkles, mini chocolate chips, or crushed nuts for a fun, colorful touch.
Place the completed sandwiches on a parchment-lined baking sheet and freeze for at least 30 minutes to firm up the ice cream and hold the sandwiches together.
Serve the ice cream sandwiches immediately, or store them in an airtight container in the freezer for later enjoyment.
