In a bowl, mix the peanut butter and powdered sugar together until smooth and creamy. The powdered sugar will help to thicken and sweeten the peanut butter.
In a microwave-safe bowl, melt the chocolate chips in 20-second intervals, stirring each time until fully melted and smooth. You can also melt the chocolate using a double boiler.
Line a muffin tin with paper liners.
Spoon about 1 tablespoon of melted chocolate into the bottom of each muffin cup, spreading it evenly to cover the bottom.
Chill the chocolate in the fridge for about 5 minutes to firm up slightly.
Once the chocolate has set, add about 1 tablespoon of the peanut butter mixture on top of the chocolate in each cup, flattening it slightly to form an even layer.
Top with another spoonful of melted chocolate, covering the peanut butter layer completely.
Place the muffin tin in the fridge for about 30 minutes or until the chocolate hardens and the peanut butter cups are set.
Once set, remove the peanut butter cups from the muffin tin and enjoy!
