Grate the potatoes using a coarse grater.
Squeeze out excess moisture by placing the grated potatoes in a clean kitchen towel and wringing them out.
In a large bowl, combine the grated potatoes, chopped onion, egg, flour, baking powder, salt, pepper, and optional garlic powder.
Stir until everything is well combined — the mixture should be thick enough to hold together.
With your hands, form the potato mixture into small patties or fritters (about 2–3 inches in diameter).
Heat vegetable oil in a large frying pan over medium heat (about ¼ inch deep).
Once the oil is hot, carefully place the fritters in the pan, cooking in batches so they aren’t crowded.
Fry for 3–4 minutes per side, or until golden brown and crispy.
Place the fritters on a plate lined with paper towels to drain any excess oil.
Serve immediately while crispy and hot!
