🥧 Savory Vegetable & Cheese Pie

Roll out the pastry and line a greased tart or pie pan (22–24 cm / 9–10 inch).
Prick the base with a fork and refrigerate while prepping the filling.
Sauté the veggies:
Heat olive oil in a pan, sauté chopped vegetables until soft.
Season with salt, pepper, and herbs. Let cool slightly.
Make the filling:
In a bowl, whisk eggs with milk (or cream).
Stir in grated cheese and the cooled vegetables.
Assemble:
Pour the mixture into the prepared crust.
Optional: sprinkle extra cheese or herbs on top.
Bake:
Bake at 180°C (350°F) for 35–40 minutes, or until golden and set in the center.
Let it rest 5–10 minutes before slicing.
