Steps:

 Prep the crust:

    • Roll out the pastry and line a greased tart or pie pan (22–24 cm / 9–10 inch).

    • Prick the base with a fork and refrigerate while prepping the filling.

  1. Sauté the veggies:

    • Heat olive oil in a pan, sauté chopped vegetables until soft.

    • Season with salt, pepper, and herbs. Let cool slightly.

  2. Make the filling:

    • In a bowl, whisk eggs with milk (or cream).

    • Stir in grated cheese and the cooled vegetables.

  3. Assemble:

    • Pour the mixture into the prepared crust.

    • Optional: sprinkle extra cheese or herbs on top.

  4. Bake:

    • Bake at 180°C (350°F) for 35–40 minutes, or until golden and set in the center.

    • Let it rest 5–10 minutes before slicing.
